An easy and reliable method for the determination of total nitrogen and protein in shortbread according to the Kjeldahl method, as described in the AOAC 935.39 regulations, is introduced below. The samples are digested using the SpeedDigester K-436 and K-439. The distillation and back titration is performed with the KjelFlex K-360, external dosage device and Metrohm 848 Titrino plus.
