A simple and reliable procedure for determination of fat content in different plant-based meat samples according to Weibull-Stoldt Extraction is introduced. Vegan nutrition and sustainable plant-based protein sources are increasingly demanded by consumers. These foods must fulfil the same food laws regarding safety and labelling as any other types of food. Compliant fat determination is in an important parameter as well for labelling as for quality control of the foodstuff.

The samples are hydrolyzed using the HydrolEx H-506. The extraction is performed with the FatExtractor E-500 Soxhlet. Gravimetric determination of the total fat content follows the drying of the extract to a constant weight. This application complies with official methods (EN 98/64/EG, AOAC 963.15, ISO 22630:2015, AOAC 991.36).

The acid hydrolysis step increases the fat recovery rates and is mandatory for the determination of the total fat content for these sample types. The presented application gives reliable and highly repeatable results. The total extraction time is less than 90 min for six samples.
